These Sourdough Chocolate Chip Muffins are soft, fluffy, and full of melty chocolate. They come together in 30 minutes in one bowl and have quickly become a favorite with my pickiest taste tasters, my kids!
260gramschocolate chipsmilk or semi-sweet, 1 ½ cups
Instructions
Prep: Preheat the oven to 375ºF (190ºC). Grease a muffin tin or line with paper liners.
Combine wet ingredients: In a large bowl, whisk together the wet ingredients until combined.300 grams granulated sugar, 80 grams neutral oil, 60 grams whole milk, 180 grams sour cream, 60 grams sourdough discard, 5 grams vanilla extract, 2 large eggs
Combine dry ingredients: Add the dry ingredients and stir until just incorporated—do not overmix.245 grams all purpose flour, 10 grams baking powder, 3 grams salt
Add chocolate: Fold in the chocolate chips.260 grams chocolate chips
Add to muffin pan: Spoon about ¹⁄₃ cup of batter into each of the 12 muffin cups.
Bake: Bake for about 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Cool: Cool in the pan for a few minutes, then transfer muffins to a wire rack to cool completely.
Notes
I personally bake with a mild olive oil used for baking but you can also use canola or vegetable oil in this recipe.
Do not overmix the batter. Only incorporate until the flour is just incorporated. Overmixing can cause the muffins to become tough.
Ovens can vary, so to ensure the muffins are baked properly, insert a toothpick into the center of the muffin. You’ll know they are cooked through when the toothpick comes out clean or with just a few crumbs.
Remove the muffins from the muffin pan after a few minutes and let them cool on a cooling rack. This helps ensure that the muffins do not overbake.
