Take a 10" cast iron skillet and add 2 tablespoons of butter. Melt the butter over medium heat.28 grams butter, unsalted
Add sliced peaches, brown sugar, and cinnamon, and stir to combine.5 peaches peeled and sliced, 100 grams brown sugar, 3 grams cinnamon
Bring the peach mixture to a boil, then reduce to a simmer for 10 minutes.
Remove from the pan and let cool in a bowl.
Make the cobbler:
Mix all the cobbler ingredients together, except the butter and 1/4 cup of the brown sugar, until combined and all the flour is incorporated.145 grams all-purpose flour, 6 grams baking powder, 250 grams brown sugar, divided, 3 grams salt, 110 grams milk, 5 grams vanilla extract, 70 grams sourdough discard
Melt 8 tablespoons of butter in the cast iron pan. Add the cobbler batter on top of the melted butter. Do not mix them together.114 grams butter, unsalted
Scoop the peaches over the batter, including the liquid.
Sprinkle the top with 1/4 cup brown sugar.
Bake:
Preheat the oven to 375°F. Bake for 35-40 minutes, or until the cobbler is golden brown.
Remove from the oven and let cool slightly. Top with a scoop of vanilla ice cream or a dollop of whipped cream and enjoy!
Notes
If you don't have a cast iron pan you can make this cobbler in a 9x13 pan.
Store in an airtight container in the fridge for up to 5 days. Heat in the microwave and enjoy!
