The Best Sourdough Peach Cobbler

Cobbler is one of my all-time favorite desserts, and this sourdough peach cobbler is at the top of the list. Packed full of fresh, juicy peaches and topped with a buttery, cake-like cobbler, this sourdough peach cobbler is incredible! It comes together quickly in a cast iron skillet and is baked to perfection. Serve it warm with a scoop of vanilla ice cream for a delicious summertime dessert.

The best part about summer is all the fresh fruit and yummy recipes that come along with it! I’ve been getting the best peaches this summer, bursting with flavor and so juicy. They were practically begging to be made into cobbler. If you are making this out of peach season and can’t find fresh peaches, you can always swap for frozen or canned peaches.   • Uses a homemade sourdough cake batter for the cobbler topping instead of a biscuit which makes for a very moist and tasty cobbler. 

Ingredients for the Sourdough Peach Cobbler

  • Peaches – I love using fresh peaches but you can also use frozen or canned.  
  • Butter – I recommend using unsalted to control your salt level in the recipe but salted works as well.
  • Milk – You can use whatever type of milk you have on hand, I always go for whole milk.
  • Sourdough discard – You can use discard straight from the fridge for this recipe or you can use active starter.

Instructions to Make Sourdough Peach Cobbler

Step 1: Start by making the peach filling. Take a 10″ cast iron skillet and butter the sides and bottom of the pan.

Step 2: Add sliced peaches, brown sugar, and cinnamon, and stir to combine. Bring the peach mixture to a boil, then reduce to a simmer for 10 minutes. Remove from the pan and let cool in a bowl.

Step 3: Next, make the cobbler. Mix all the cobbler ingredients together, except the butter, until combined and all the flour is incorporated.

Step 4: Melt 8 tablespoons of butter in the cast iron pan over medium heat.

Step 5: Add the cobbler batter on top of the melted butter. Do not mix them together.

Step 6: Scoop the peaches over the batter, including all of the liquid.

Step 7: Sprinkle the top with brown sugar.

Step 8: Preheat the oven to 375°F. Bake for 35 minutes, or until the cobbler dough is golden brown and the cobbler topping is cooked through.

Remove from the oven and let cool slightly. Top with a scoop of vanilla ice cream or a dollop of whipped cream and enjoy!

Recipe Tips

  • Use fresh, ripe peaches for the best flavor but in a pinch you can use canned or frozen. 
  • I highly recommend topping with vanilla ice cream. It’s such a delicious combo! 
  • If you don’t have a cast iron pan you can bake in a 10×10 or 9×13 pan, although timing will vary. (See below.)

What to Do If You Do Not Have a Cast Iron Pan

A cast iron pan makes this recipe easy because you can take it from the stovetop and put it directly in the oven, unlike most pans or skillets. It also helps create crispy edges on the cobbler. If you do not have a cast iron pan, you can still make this recipe! Here is what you can do instead:

  1. Cook the Peaches:
    • Cook the peaches in a regular skillet and remove from heat. Then, in the same skillet, melt 8 tablespoons of butter.
  2. Prepare the Baking Dish:
    • Take a 9 x 13 baking dish and add the melted butter to the bottom, spreading it around evenly.
    • Add the cobbler batter and peaches on top of that, following the same instructions.
  3. Bake:
    • Place the 9 x 13 pan into the oven and bake. Baking times may vary.

How to Store Sourdough Peach Cobbler

To store the peach cobbler, let it cool and then transfer it to an airtight container. Store it in the refrigerator, where it will stay fresh for 4-5 days. To serve warm, you can reheat it in the microwave in 30-second increments until warmed through. Alternatively, you can place it back in a 350°F oven for about 10 minutes until warm, then enjoy!

Recipe FAQ

Can I use frozen or canned peaches?

Yes, either fresh, frozen or canned peaches will all work in this sourdough peach cobbler recipe. Fresh will taste best, but in a pinch you can use canned or frozen.

Can I use active sourdough starter instead of discard?

Yes! You can use active starter in place of discard if you’d like.

Can this sourdough peach cobbler be long fermented?

Yes! Long fermenting the dough when sourdough discard is added helps break down the phytic acid and gluten, making it easier to digest. If you would like to do this with the sourdough peach cobbler dough, simply mix up the cake batter beforehand and refrigerate it for 12-24 hours. Then proceed with making the peach filling and follow the directions for making the cobbler.

Ingredients 

Peach Filling

  • 28 grams butter, unsalted, 2 Tablespoons
  • 5 peaches peeled and sliced, 555 grams
  • 100 grams brown sugar, ½ cup
  • 3 grams cinnamon, 1 teaspoon

Cobbler

  • 114 grams butter, unsalted, 8 Tablespoons
  • 145 grams all-purpose flour, 1 cup
  • 6 grams baking powder, ½ Tablespoon
  • 250 grams brown sugar, divided, 1 ¼ cup
  • 3 grams salt, ½ teaspoon
  • 110 grams milk, ½ cup
  • 5 grams vanilla extract, 1 teaspoon
  • 70 grams sourdough discard, ⅓ cup

Instructions 

Make the Peach Filling:

  • Take a 10" cast iron skillet and add 2 tablespoons of butter. Melt the butter over medium heat.
    28 grams butter, unsalted
  • Add sliced peaches, brown sugar, and cinnamon, and stir to combine.
    5 peaches peeled and sliced, 100 grams brown sugar, 3 grams cinnamon
  • Bring the peach mixture to a boil, then reduce to a simmer for 10 minutes.
  • Remove from the pan and let cool in a bowl.

Make the cobbler:

  • Mix all the cobbler ingredients together, except the butter and 1/4 cup of the brown sugar, until combined and all the flour is incorporated.
    145 grams all-purpose flour, 6 grams baking powder, 250 grams brown sugar, divided, 3 grams salt, 110 grams milk, 5 grams vanilla extract, 70 grams sourdough discard
  • Melt 8 tablespoons of butter in the cast iron pan. Add the cobbler batter on top of the melted butter. Do not mix them together.
    114 grams butter, unsalted
  • Scoop the peaches over the batter, including the liquid.
  • Sprinkle the top with 1/4 cup brown sugar.

Bake:

  • Preheat the oven to 375°F. Bake for 35-40 minutes, or until the cobbler is golden brown.
  • Remove from the oven and let cool slightly. Top with a scoop of vanilla ice cream or a dollop of whipped cream and enjoy!

Notes

  • If you don't have a cast iron pan you can make this cobbler in a 9×13 pan.
  • Store in an airtight container in the fridge for up to 5 days. Heat in the microwave and enjoy!

    This is my go to recipe for cobbler! We’ve tried different variations, like blueberry/peach/pear, cranberry apple pear, peach raspberry…. It’s delicious. I also add cinnamon to my batter and add extra starter!

    I love finding ways to use my discard. I love peach pie. Emily posted this recipe and I was intrigued! It was so easy to make in my large skillet. I used a big jar of peaches and added some frozen blueberries. My whole family loved it. I typically bake with reduced sugar amounts, so it was REALLY sweet for me, but delicious, buttery, fruity goodness. I sent the recipe to my sourdough friends right away! Will definitely make again ❤️

    Wow! This turned out really good, i just used discard frim my sourdough and just mixed in with ingredients but added a little more milk and I did not wait for any rising. It turned out beautifully tasty and family loves it.
