The Best Sourdough Peach Cobbler

Cobbler is one of my all-time favorite desserts, and this sourdough peach cobbler is at the top of the list. Packed full of fresh, juicy peaches and topped with a buttery, cake-like cobbler, this sourdough peach cobbler is incredible! It comes together quickly in a cast iron skillet and is baked to perfection. Serve it warm with a scoop of vanilla ice cream for a delicious summertime dessert.

The best part about summer is all the fresh fruit and yummy recipes that come along with it! I’ve been getting the best peaches this summer, bursting with flavor and so juicy. They were practically begging to be made into cobbler. If you are making this out of peach season and can’t find fresh peaches, you can always swap for frozen or canned peaches.

Tools to make the Sourdough Peach Cobbler
10″ or 12″ Cast Iron Skillet– This recipe is made in a cast iron skillet so that you can easily transfer it from the stovetop into the oven. It also helps the cobbler bake evenly and creates crispy edges. If you do not have a cast iron pan that’s okay, you can just bake the cobbler in a 9×13 pan.
Measuring Cups and Spoons– you will need a variety of measuring cups and spoons to measure out all of the ingredients for this recipe.

Ingredients for the Sourdough Peach Cobbler
Peach filling:
- Peaches – Fresh peaches that are skinned, sliced and pit removed.
- Brown sugar – Made with brown sugar for a sweet, rich flavor.
- Ground Cinnamon – Cinnamon complements the peaches and brown sugar so well. You will use 1 tsp of cinnamon for this recipe.
Sourdough Cobbler
- Butter – I recommend using unsalted to control your salt level in the recipe.
- Flour – I always use unbleached all-purpose flour.
- Baking powder – This is used to help the cobbler dough rise.
- Brown sugar – This creates a moist and sweet cake-like topping. It also is sprinkled on top to caramelize the cobbler.
- Salt – Any type works! Just 1/2 tsp salt to bring out the flavor.
- Milk – You can use whatever type of milk you have on hand, I always go for whole milk.
- Vanilla extract – This adds add flavor to the cobbler. You will need one teaspoon.
- Sourdough discard – You can use discard straight from the fridge for this recipe. You will need 1/3 cup sourdough discard.
Instructions to Make Sourdough Peach Cobbler

- Make the Peach Filling:
- Take a 10″ or 12″ cast iron skillet and butter the sides and bottom of the pan.
- Add sliced peaches, brown sugar, and cinnamon, and stir to combine.
- Bring the peach mixture to a boil, then reduce to a simmer for 10 minutes.
- Remove from the pan and let cool in a bowl.
- Make the Cobbler:
- Mix all the cobbler ingredients together, except the butter, until combined and all the flour is incorporated.
- Melt 8 tablespoons of butter in the cast iron pan over medium heat. Add the cobbler batter on top of the melted butter. Do not mix them together.
- Scoop the peaches over the batter, including all of the liquid.
- Sprinkle the top with brown sugar.
- Bake:
- Preheat the oven to 375°F. Bake for 35 minutes, or until the cobbler dough is golden brown and the cobbler topping is cooked through.
- Remove from the oven and let cool slightly. Top with a scoop of vanilla ice cream or a dollop of whipped cream and enjoy!
What to Do If You Do Not Have a Cast Iron Pan
A cast iron pan makes this recipe easy because you can take it from the stovetop and put it directly in the oven, unlike most pans or skillets. It also helps create crispy edges on the cobbler. If you do not have a cast iron pan, you can still make this recipe! Here is what you can do instead:
- Cook the Peaches:
- Cook the peaches in a regular skillet and remove from heat. Then, in the same skillet, melt 8 tablespoons of butter.
- Prepare the Baking Dish:
- Take a 9 x 13 baking dish and add the melted butter to the bottom, spreading it around evenly.
- Add the cobbler batter and peaches on top of that, following the same instructions.
- Bake:
- Place the 9 x 13 pan into the oven and bake. Baking times should be similar.

How to Store Sourdough Peach Cobbler
To store the peach cobbler, let it cool and then transfer it to an airtight container. Store it in the refrigerator, where it will stay fresh for 4-5 days. To serve warm, you can reheat it in the microwave in 30-second increments until warmed through. Alternatively, you can place it back in a 350°F oven for about 10 minutes until warm, then enjoy!

Optional Long Ferment
Long fermenting the dough when sourdough discard is added helps break down the phytic acid and gluten, making it easier to digest. If you would like to do this with the sourdough peach cobbler dough, simply mix up the cake batter beforehand and refrigerate it for 12-24 hours. Then proceed with making the peach filling and follow the directions for making the cobbler.

This is my go to recipe for cobbler! We’ve tried different variations, like blueberry/peach/pear, cranberry apple pear, peach raspberry…. It’s delicious. I also add cinnamon to my batter and add extra starter!

I love finding ways to use my discard. I love peach pie. Emily posted this recipe and I was intrigued! It was so easy to make in my large skillet. I used a big jar of peaches and added some frozen blueberries. My whole family loved it. I typically bake with reduced sugar amounts, so it was REALLY sweet for me, but delicious, buttery, fruity goodness. I sent the recipe to my sourdough friends right away! Will definitely make again ❤️
Wow! This turned out really good, i just used discard frim my sourdough and just mixed in with ingredients but added a little more milk and I did not wait for any rising. It turned out beautifully tasty and family loves it.
